Thick and Creamy Chocolate Mousse

Who says you cannot enjoy the yummier things in life when you choose to live a life with clean eating. We love a cheeky treat at The Goodie Box, especially on the weekend when we get to chill out a bit. We are always on the lookout for recipes that are decadent but easy to make because, like most busy mums and professionals, time is precious.

Some of our favourite 'sweet' treats are found at Nourishing Amy, who understands the right combination for creating healthy and nutritious desserts and snacks. Nothing beats her thick, delicious and creamy chocolate mousse and is one we really enjoy. We hope you find it just as tasty as we do!

Chocolate Mousse

⭐︎Roast 350g sweet potato (roughly one large potato) at 160Fan/180*C for 40-60 mins until tender, scoop out the flesh, cool and freeze. Or steam the chunks and freeze.

⭐︎blend the frozen sweet potato with 1 ripe banana + 2 tbsp cacao powder + 2 tbsp syrup + 1 scoop vanilla or chocolate protein powder, optional + 1 tsp maca or Reishi powder + a pinch of @maldonsalt + 140ml coconut or oat milk until thick and smooth

⭐︎layer in a jar with 4 tbsp coconut yoghurt 

⭐︎top with 1 tbsp cacao nibs + berries

⭐︎Enjoy every spoonful!
